Non-Dairy Not Too Sweet Coconut Mango Creamy Dessert

nondairydessertI could only think to name this dessert what describes it!  That’s right, it’s not dairy but you’ll swear it is!  During the hot summer months we all enjoy a cold creamy treat but if you are dairy intolerant like I am ice cream isn’t ok and many of the sorbets are just too sweet for me!  All you need is a good blender to make this!
1T. whole chia seeds
3T coconut milk to soak chia in
1/3 – 1/2 cup of coconut milk
about 1/2 cup frozen berries
1 cup chopped and frozen mango
In a little bowl, soak the chia seeds in about 3 tablespoons of coconut milk for at least 15 – 20 minutes.  (I tried water at first but I think that takes some of the creaminess out of the final product).  After soaking, when the chia is like a mass of gel, put it along with the frozen berries (any kind you like) in the blender and add a bit of the coconut milk to be able to blend that together.  Then add the frozen mango chunks and the rest of the coconut milk.  Start the blender on low and let the chunks start to break up a bit.  Slowly turn up the speed as you also push the contents down to the blades. You’ll be tempted to add more liquid to make it all blend up faster but be patient as it will eventually do so.  It will be thicker if you don’t add too much liquid!  Eat this right away, it loses its thickness if it sits for too long.I’m sure you could try making this with many different fruits and see how you like it. Mangos, however, have an interesting quality that makes them very creamy when blended.
